Our standard turkey eggs are a good size from the first one, probably because the hens are usually hatched in May and come into lay the following March, so they are fully mature before they start. Commercially, first year hens are used for hatching egg production. I dont have any experience of collecting eggs from commercial turkeys but I would expect them to be capable of laying from the age of about 6 months, depending on the time of year. By "white turkeys", I assume you are referring to a commercial type?
