registering to sell eggs

hi new to this

i have sold eggs at the farm gate for 6 years
most of my neighbours now sell eggs too
i am wanting to branch out and sell to local shops and pubs etc.
i have emailed defra and they have given the information i need to register
how complicated is it and is there a lot more work involved than just selling at the gate.

There was an article about this in Practical Poultry last year. They have to be date stamped -each egg, 1 month from when they were laid I think. You can't specify them as medium or large unless you have calibrated scales. Think they call them 'eggs of various sizes'. They can't be washed but you can scrape the worst off -to be honest though nobody will buy soiled eggs. Sorry I can't remember more. Our chickens are somewhat pampered so eggs cost more to produce than they sell them for in the shops (so we actually sell at a loss just to cover some of our hobby costs) and there is no room for markup or discounts so we certainly couldn't go into the resale market.

It's usual when Defra send out applications to join a scheme for them to send the rules as well so I'd check with them if no-one on here can give you a full answer.
