question on eggs

hi all,
this may be a daft question to a lot of you,but I am new to poultry and have 4 hens in the back garden,
my light Sussex has been the first to lay,and has laid the last three mornings,and I have had a fried egg sandwich the last three mornings,
now then,are eggs at their best straight from the nestbox,or best kept a few days.
how do you keep them,room temp or refidgerated,how long can I keep them.
when all four start laying I might have problems,any suggestions ?

They say eggs are best a couple of days old but personally I don't mind how old they are because none last longer than a week here!

The freshest eggs are hard to peel if you hard boil them.

I keep mine on a tray in our pantry - some keep them in baskets, some refrigerate.

It's strange how health and safety works because egg boxes say "Keep Refrigerated after purchase" on them yet they don't keep them refrigerated in the shop. I guess if you want to store them for a long time (up to 4 weeks or so) you might want to think about keeping them in the fridge.

When we get too many eggs, I usually give a few to the neighbours.

I gave eggs to my neighbours when we went on holiday, we had 12 left couldn't get through them fast enough, wasn't sure what the neighbours thought about the chickens, but on leaning over the fence with a dozen in my hand they were chuffed to bits, they say they adore listening to them first thing in the morning clucking away, relief! :)

We keep ours in the fridge but I'm on the look out for a nice egg display for the kitchen counter, where I can show off my sometimes mis-shapen eggs! Normally we eat them before a week is up or sell them for £1.50 a box, just lovely to have Mrs Cluck and Mrs Chicken Lickin in the garden :D
 
The eggs don't last long in our house either- they are eaten or popped in an incubator :lol:

If I'm hard boiling them I always use the older ones as I find them easier to peel ;)

i love that egg holder but i'm afriad eggs dont last long enough in my house to use one i have so many customers that most of my eggs are sold daily or i end up with a waiting list :lol: i think i may get about 6 eggs a week for my family .
 
If I am having boiled eggs I like them as fresh as possible, and normally walk up to the barns a get a couple of new laids. The whites have a different quality when very fresh.

If I am frying or scrambling I just use whatever is to hand, and if I am hard boiling I try to use them at least a few days old, and older if they are around.

Years ago I remember my parents putting a tray of eggs in the fridge to see how long they did actually last, and after about 6 weeks they lost interest, so possibly they would have been fresh enough to eat for ever longer.
