I'm not trying to defend anything but bear in mind that this is in the U.S.A. OH gets a health newsletter which is American and some of the stuff that goes on in the States would make your hair curl. Food production is generally better controlled, or at least better legislated for in the UK. The newsletter often talks about common stateside practices and then praises the UK for having outlawed these practices years ago.
I am fortunate in living close (10 miles) from a couple of really good butchers, both of whom can trace their meat back to the producer. The worst thing I found out about chicken meat was when I was researching how to despatch chickens. It was I think a Defra article which highlighted the fact that the stunning of chickens before slaughter was not always effective because the birds can move, so they can still be alive when they reach the scalding tank. It was not good reading.
There are also a lot reports/rumours that a lot of supermarket meat is Hallal, but not declared as such, which a lot of people find upsetting.
