OK, I scoffed at my mate when he suggested this. But I have to admit that lamb steaks are juicier and more flavoursome than any beef steak I’ve ever eaten. From now on Mr Slaughterman will be asked to do this cut for me. I suggest you give them a try. Not on the usual butchers repertoire but can be easily created from a lambs leg. I hate to admit that some gnarly old Fetlar crofter has added to my gastronomic repertoire but credit where credits due.
