Goose eggs - questions from first year goosekeeper

Hi - this is my first year with adult geese so a few questions if I may

First egg appeared this morning, they have been making a bit of a nest and the gander has been mating at least one for a while now.

I automatically picked the egg up and took it to the house to admire.

Should I have left it in the nest?
Should I leave 2 or 3 to encourage laying there?
Shall I try incubating the first eggs - they are African and and some sort of african/ chinese /toulouse cross (I know you cant trust ebay- see my earlier thread) and I have heard they dont lay many eggs
They have access to about 3/4 acre grass and have wheat at night and rolled peas on which they are not very keen. Is this a sufficient diet for breeding purposes.
