We have a large and ever increasing population of Grey Lag Geese overwinter here. We also periodically have Goose Pie nights, the next one being December 20th. So I was pleased to hear the sound of a shot gun being fired this morning. Should be a good night! ?
 
How long does it take to pick all the pieces of lead shot out of the pie???
 
We were Holkham way (Norfolk) on Wednesday and saw the 20 thousand or so Pinkfeet Geese leave the marsh at Holkham at dawn and fly out to feed in various fields. Lovely sight.
What else goes into the Goose Pie, is there a traditional recipe or flavourings that get used?
 
Well I know only the breast fillets are removed and the rest discarded. As to other ingredients I know Guinness figures and that’s all I know. The guy who cooks jealously guards the recipe.
