We have a large and ever increasing population of Grey Lag Geese overwinter here. We also periodically have Goose Pie nights, the next one being December 20th. So I was pleased to hear the sound of a shot gun being fired this morning. Should be a good night! ?

They usually pass through here on their way from Iceland to to the mainland. A few stay and overwinter but not enough to eat! We had a goose for Xmas once, cost a fortune and not much meat on it. Not impressed.

We were Holkham way (Norfolk) on Wednesday and saw the 20 thousand or so Pinkfeet Geese leave the marsh at Holkham at dawn and fly out to feed in various fields. Lovely sight.
What else goes into the Goose Pie, is there a traditional recipe or flavourings that get used?
