That's a difficult one.
Do you know which hen it is? This is the first thing to establish.
You could first try filling eggs with mustard, which possibly could work, but unlikely if the behaviour has become ingrained.
Try roll-away nestboxes. If you're unable to instal these, the culprit will either have to spend the rest of her life separated on her own, or be culled. There is no real cure for egg eating other than roll-away boxes which put the eggs out of reach. If it continues, other hens will learn to do it as well.
